AMARONE DELLA VALPOLICELLA DOCG CLASSICO or’ Jago
Amarone della Valpolicella DOCG Classico or'Jago is made from grapes grown in vineyards in the Jago area, in the heart of the Valpolicella Classica region.
Amarone or'Jago is a blend composed of indigenous grape varieties such as: Corvina, Corvinone, Rondinella and other indigenous varieties such as Spigamonti or Oseleta.
The grapes are harvested by hand between September and October and left to dry in the drying loft for up to 100/120 days. Crushing takes place in January/February with grape destemming. Fermentation takes place at a controlled temperature with slow maceration for about 35 days, transfer of the wine into barriques at the end of May. Once malolactic fermentation is complete, the wine is aged in Slavonian oak barrels for 24 months and then in bottles for 6-8 months for natural stabilisation.
The colour is a very intense ruby red. The bouquet is complex, with spicy notes and hints of vanilla. The flavour reveals structure and body, with aromas of dried fruit, spices and tobacco with sweet tannins giving softness.
It pairs easily with game dishes, grilled meats, braised meats and mature cheeses. It finds its ideal place at the end of a meal during informal conversation.
