TASTING NOTES.
Charles Heidsieck was founded by Charles Camille back in 1851. Today it is among the smallest of the Champagne Maisons of Reims, but of great value and quality. The special feature of this Maison are the large underground chalk quarries that extend over 8 kilometers of galleries, recognizing itself as a UNESCO World Heritage Site. Champagne Brut Blanc de Blancs De Millenaires presents itself to the glass crystal clear with nuances typical of Chardonnay. Ripe aromas can be recognized on the nose: white peach, candied lemon, violet, acacia flowers, orange blossom and herbs. The entry to the palate is marked by a savory and chalky initial sensation, which gives way to fragrant aromas of citrus peel, yellow-fleshed fruit, softness of small pastries, of Chantilly cream, giving a broad and generous, complex and rich sip, which stretches towards a harmonious, fresh and remarkably persistent finish. Recommended pairing with fish first courses: fish chowder in white, seafood risotto, fish tartare.
