Campo de Encanto originated in Pisco, the Peruvian port where the noble distillate was born in the early 17th century. The grapes are harvested entirely by hand, and the yeasts used for fermentation are indigenous and exclusively owned by the distillery. It is distilled only once and aged in the near-tropical climate of the Peruvian coast. The Distiller Reserve Quebranta version comes from the single varietal of the same name and is aged for about 3 years by the solera method. Fresh and floral, it has its ideal home in a Boston Shaker, waiting to become a Pisco Sour.
