PROCESSING AND DISTILLATION:
Pilzer's Acquavite di Mele Cotogne comes from the Trentino tradition of leaving a quince in the cupboard to give a fresh fruity scent to clean clothes. After the harvest, the apples are kept cold for a short time, usually until December, before being turned into puree. This is followed by careful fermentation and distillation in discontinuous bain-marie stills. The spirit produced is stored for over a year in steel tanks before being bottled.
ORGANOLEPTIC CHARACTERISTICS:
Undoubtedly brilliant and crystal clear, it reminds the nose of ripe Quince with a complex, pleasant and unmistakably precise scent. The flavour is clean, with an alcoholic note and an extremely rich, precise, balanced aftertaste.
TASTING RECOMMENDATIONS:
Serving temperature 16 °C. Store in a cool, dark place.
