PROCESSING AND DISTILLATION:
The story of Brandy Portegnac begins with the preparation of the must: a particularly laborious fermentation that strongly influences the final quality. After fermentation, the wine is left for a long period on its lees, and only towards the end of January is it ready to be distilled. Distillation is carried out rigorously in a discontinuous bain-marie still, with the utmost care, and then begins the very long ageing period, at least 15 years and 9 months, in Allier French oak barriques.
ORGANOLEPTIC CHARACTERISTICS:
Historiae Brandy Portegnac 15 years, has a slightly dark amber colour, obtained solely from oak. Its complex bouquet is reminiscent of the floral and fruity notes of the original wine, but strongly enriched by the aromas received from the wood during the very long period of ageing: it is a combination of fruity aromas, with vanilla and cocoa background notes. On the palate, the flavour is very warm, perfectly harmonious and particularly persistent.
