PROCESSING AND DISTILLATION:
The Valle di Cembra was a valley cultivated almost exclusively with Schiava grapes, from its vinification an excellent and only apparently simple wine was and is obtained. The Schiava grape skins arrive directly from the cellars of the valley, very fresh and delicate, they require careful processing to preserve all their fragrance. After distillation, the grappa is stored at a high degree in steel for more than a year before being bottled, to allow it to evolve better.
ORGANOLEPTIC CHARACTERISTICS:
Schiava grappa often leaves one amazed by the delicacy of its aroma, slightly floral, evolving towards hints of walnut. The taste is also fine, with complex sensations and excellent persistence. For us, Grappa di Schiava represents the synthesis of all our efforts to improve the quality of our grappas; it is our 'squaring of the circle'.
TASTING RECOMMENDATIONS:
Serving temperature 16 °C. Store in a cool, dark place.
