Genever (from the Dutch jeneverbes, juniper) was first created in the 17th century by the physicist Franciscus Sylvius de la Boe, in Leiden, in southern Holland, as a tonic and depurative. Medicinal use quickly changed to recreational and hedonistic use, and from the Dutch countryside, where it was distilled by hundreds and hundreds of artisanal microdistilleries in the winter months when work in the fields was stopped, it soon arrived on American shores, until it became a favorite distillate of the pioneers moving to the lands to the west, even effigy in the 7 Oscar-winning film, Dances with Wolves, where the typical bottles appear in many scenes, and even the protagonist occasionally does not disdain a drop.
Distilled in copper pot stills from a mash of corn, rye and malted barley, milled in traditional windmills, fermented with selected yeasts (special strains of saccharomyces cerevisiae), it is a genever with a unique character, also bestowed by aging in barrels that have previously contained Oloroso Sherry. Smooth and almost sensual, it is a distillate that recalls the past and can make many drinks unforgettable.
