An innovative gin, or maybe not even a gin, a sotol with typical gin botanicals. Master sotolero Carlos Aragón Herrera, on his Casa Ruelas farm in Aldama, Chihuahua, wanted to pay homage to the European gin with an innovative product that is Mexican to the core. The main ingredient is Dasylirion Wheeleri, which, after maturing between 18 and 25 years, is steamed, naturally fermented in open wooden barrels and distilled in an Arabian copper still, then blended to receive juniper, cardamom, fennel, orange, lemon, pepper and apricot peel. The nose expands all the botanicals used, which likewise degrade on the palate to leave the typical hints of sotol and the spicy note of juniper predominating.
