New World Gins are different from classic London Dry: in them, the typical winter notes of juniper berries are only the beginning of the sensory journey, which in fact then veers toward more representative and contemporary regional botanicals. In every sense, Principe de Los Apóstoles is the first Premium Gin in Latin America. Its main botanical elements are fresh yerba mate leaves, rosa mosqueta, corianderol, pomelo, eucalyptus, and peppermint. When the Spanish colonized the land we now know as Argentina, they brought the Jesuits with them to assist them in evangelizing the local tribes. It was from the indigenous Guarani people that the Jesuits learned the uses and benefits of the mate leaf, starting the first plantations.
And it was in the town of Apóstoles in Misiones that the first yerba mate plantation was born: an ancient link, that between the plant and the town, which justifies the informal title it can boast of, namely "National Capital of Yerba Mate." Distilled in 200-liter batches in copper stills, Apóstoles is for all intents and purposes an artisanal New World Gin. Each botanical is individually macerated in a tri-distilled grain alcohol base. The macerations are then filtered and blended following the original formula devised by Tato. Only after these steps is the batch distilled. The result of the long and painstaking process is bottled and numbered.
