Gin No. 209 is produced in small batches and obtained by performing eleven-hour distillation cycles. Each individual batch of the various botanicals is tested by the master distiller in mini stills to judge the intensity and characteristics of each essence. Only after this step are the botanicals steeped and then distilled. This process allows for greater control and better uniformity in the final product. The base spirit is produced from four column distillations of Midwestern corn and has a smooth almost sweet finish. The water used is derived from melting snow from the Sierra Nevada mountains. After allowing the botanicals to macerate in a copper still overnight, the product is distilled a fifth time. A unique, pure and handcrafted distillate is thus born. Traditional and modern at the same time, it is pleasing in every way.
