Sotol Oro de Coyame (70cl 48%) - crb

Sotol is an artisanal distillate of Dasylirion Wheeleri, a liliacea that grows wild in the deserts of Chihuahua and Sonora, in northern Mexico, and whose maturation takes 18 to 22 years. It is born in Coyame del Sotol, a town named after the noble spirit and preserves its ancient tradition. It is harvested similarly to agaves, whose plant is similar but of different origin, after which the core of Dasylirion is finely chopped and fermented five to seven days in cement barrels, then distilled continuously in an ancient copper still. Its silvery, crystalline reflection is striking to the eye.
