  • Sotol Coyote Durango is made by Alejandro Solís in Cuencamé, San Antonio, Durango using only Dasylirion Cedrosanum. The piñas are cooked in a steam oven and then fermented in open wooden barrels to allow indigenous yeasts to activate the fermentation process. It is then distilled twice in steel stills.
