Clande celebrates the art and tradition of artisanal spirits in Chihuahua. Clandestine distilleries were very common in northern Mexico and were called vinatas. They usually produced both Sotol (from Dasylirion) and Lechuguilla (from agave). Vinatas were banned in the early 1900s and Maestros Sotoleros were even, at times, arrested. The Sotol Clande represents sotols and lechuguillas from different areas with different terroirs; it is a project aimed at supporting small local producers, to improve their living conditions. The 100% Agave Lechuguilla, a creation of Master Destilador Tavi Torres, is made from Shrevei agave harvested in the village of Batopilas, in the state of Chihuahua, then baked in underground conical ovens, mechanically milled using traditional methods, fermented thanks and wild yeasts in stone tanks, then distilled in 135-liter steel stills. Herbaceous and smoky, an ideal accompaniment for an authentically Mexican evening.
