MEZCAL ILEGAL AÑEJO

Ilegal is a perfect balance of espandin vivipara agave flavor and a light smokiness. The piñas are cooked in a traditional underground oven and placed on top of volcanic rocks. The heart of the agaves is then ground using the tahona grinder. After fermentation, triggered only by indigenous yeasts, the must is distilled twice in Oaxaca's Tlacolula Valley by a fourth-generation Mezcalero. The result is a mezcal extremely faithful to tradition. Ilegal's Mezcal Anejo is a highly prestigious version of this agave distillate. It is aged for at least 13 months in American and French oak barrels so as to increase the complexity of the woody notes.
