The union between Mexico and the modern world, this is how the Fisherman of Dreams defines Vecindad, the latest addition to the Santa Sabia Distillery; but let's take a step back, to when Vecindad wasn't even in its embryonic stage. France, autumn 2016, sitting at the counter of a Parisian bar in the company of an old friend, the Fisherman finds himself faced with a unique opportunity: the old friend intends to produce a 100% Agave tequila to introduce into Paris bars like house tequila. Could the Fisherman perhaps not have seized this opportunity? No, and in fact at the beginning of 2017, Santa Sabia Distillery launches the Vecindad project; it is a different tequila, produced in a technological and efficient way, with the fermentation of the piñas juice taking place in an autoclave and the distillation in columns.
From agaves born and grown in the Tequila Valley, at 1200 m above sea level, near the Tequila Volcano, Vecindad is modern, of a crystalline purity with its herbaceous, citrus notes and the mineral richness given to it by the proximity to the volcano.
A Tequila Pop, and the bottles themselves say so; the very bright colors and the stories so absurd, they almost seem true, which are reported on the label, have contributed to lightening the brand, giving Vecindad the air of a tequila you can definitely trust.
Scientific name: A. Tequilana Weber. Born and raised in the Tequila Valley at 1200 meters above sea level, near the volcano which gives this tequila its strong mineral richness. The production of Tequila Vecindad begins with grinding through diffusers that allow the agave juice to be cooked, preparing it to ferment in stainless steel containers and then be distilled in columns. It is a modern version of Tequila with high crystalline purity with herbaceous and citrus notes; the sip leaves notes of sweetness and cooked agave, together with the freshness of mint and a slightly bitter finish.
