In operation since 2014, this distillery is owned by the Wemyss family. Kingsbarns is located just outside St. Andrews, in the Scottish Lowlands area: it uses only local barley from the Fife area, or "Kingdom of Fife," as the Scots call it, to produce its whiskies. Doocot, the latest release, is the single malt considered the flagship of Kingsbarn's production. Distilled from barley harvested within a 10-kilometer radius of the distillery, Doocot has matured in cask for a significantly longer period of time than its fellow single malts. Isabella, the production manager, personally (and meticulously) selected for maturation a combination of ex-Bourbon and Portuguese red wine casks, the latter carved, toasted and re-carbonated.
The appearance of rich damson actually hides an all-fruit and floral character, intense and pleasant; pineapple syrup, summer berries, tropical notes, to a citric finish.
