Remote and isolated but rich in wildlife, the Scottish Highlands governs the landscape and provides valuable fuel for the whiskey-making process. Knockdhu Distillery, founded in 1894, is one of the most enchanting in the Scottish Highlands. Bounded by an abundance of natural resources wonderfully suited to whiskey production, the distillery sits in the shadow of nearby Knock Hill-home to springs of pure, clear water-and is at the gateway to a region rich in barley and peat.
The degree of peatiness can be cotrolled based on the amount of peat burned and the moisture content of the barley. Peat smoke produces chemicals called phenols, and it is by their content that the "peatiness" of a whiskey, expressed as PPM (parts per million), can be measured.
