VINIFICATION AND AGEING
Harvest Accurate and timely thinning ensures a balanced production within the limits set by the production regulations. Harvesting takes place slightly in advance of the ripening of the bunches, choosing the healthiest ones, which are harvested by hand into boxes.
Basic vinification The grapes, delivered intact to the winery, are immediately cooled and then destemmed and crushed. Soft pressing follows after a short maceration in the press and white vinification. Alcoholic fermentation lasts about seven days and takes place at a temperature of about 18°C. At the end of fermentation, the base wine of a lively pink colour is obtained, which is separated from the coarser lees.
Foaming Foaming takes place in an autoclave very slowly to enhance the freshness and varietal fruity and floral aromas in the wine.
