

A brut sparkling wine made using the charmat method and almost exclusively from Müller Thurgau grapes cultivated in hilly areas with a greater temperature range, through which the varietal aromas are more pronounced.

VINEYARD CHARACTERISTICS
Location of the vineyards high in the hills up to an altitude of 800 m above sea level, where large daily temperature fluctuations occur.
Grape variety used 100% Müller Thurgau.
Training system Trentino pergola and guyot.
VINIFICATION AND AGEING
Harvesting Accurate and timely thinning ensures grape yields per unit area within the limits set by the production regulations. Harvesting takes place at the beginning of September, selecting the ripest and healthiest bunches, which are picked by hand into crates.
Basic vinification The grapes, delivered intact to the winery, are immediately destemmed and crushed. A soft pressing follows, trying to minimise any possible contact with the air. Alcoholic fermentation lasts about seven days and is carried out at a controlled temperature. At the end of fermentation, the base wine is obtained, which is cooled and separated from the coarser lees.
Sparkling The mousse takes place in stainless steel tanks very slowly to enhance the varietal aromas in the wine.
ORGANOLEPTIC CHARACTERISTICS
Perlage Very fine and persistent.
Appearance Pale straw yellow with greenish hues.
Nose Delicate, finely aromatic bouquet with a spicy note.
Taste Soft, decidedly fresh, elegant and delicate flavour.

Alcoholic degree 11.5% vol.
Total acidity 5.5 to 6.5 g/l.
pH around 3.20.

SERVING TEMPERATURE
Serve at a temperature of 8 °C.
