Vinification
The grapes used for this wine, cultivated with the
Guyot" training system and according to the
organic farming guidelines, are harvested
exclusively by hand. The harvest is followed by a
meticulous selection of the destemmed grapes. The process of
fermentation, which lasts about 20 days, takes place
inside stainless steel tanks at a controlled
controlled temperature of approximately 24°-28° C.
Description
A bright red wine with purple highlights. The bouquet
is intense, with notes of blackberry and plum. On the palate it is
round and well balanced and the softness of the tannins
guarantees a full-bodied and persistent finish.
Pairings
This wine is perfect in combination with numerous dishes
red meat dishes, including horse and sheep. Perfect
also with particularly tasty hard cheeses
flavoursome cheeses.
