Campo de Encanto originated in Pisco, the Peruvian port where the noble distillate was born in the early 17th century. The grapes are harvested entirely by hand, and the yeasts used for fermentation are indigenous and exclusively owned by the distillery. It is distilled only once and aged in the near-tropical climate of the Peruvian coast. The Acholado version, meticcio in Italian, comes from a blend of grape varieties and is ideal in blending; it is also the most popular type of pisco among Peruvians.
