The new Solera Grappas are the result of Marolo's unceasing quest for the most unique distillation techniques and methods, sourced from all over the world but rigorously applied to grappas from indigenous grape varieties, made from the freshest pomace, handcrafted in discontinuous distillation.
The Solera method, which is very popular in the production of Ruhm, involves creating a special blend of grappas aged in barrels with different aging ages, according to a dynamic method. The barrels are ordered in pyramidal stacks: the top row contains the youngest grappa while the bottom row, called Solera (which means "soil" in Spanish) contains the oldest grappa. Each year a portion of the Solera is bottled and the barrels are refilled with the distillate from the top row.

AGEING: The oldest part of Solera is aged for at least 7 years in second-passage barriques used for Piedmont Chardonnay. The choice of white wine barrels is "neutral," to ensure the nebbiolo pomace has its full varietal expressiveness
TASTING: deep amber color, the nose presents an apio aromatic range with a prevalence of fruity notes over which the pleasantly balsamic character of nebbiolo da Barolo is always perceptible. Complex and delicate nuances of dried and syrupy fruit, plum and raisins are perceived in the mouth. The woodiness of barrel aging is never too intrusive and suggests nuances of cocoa and bitter chocolate.
