PRODUCTION approx. 50,000 bottles of 0.75 l. and approx. 500 bottles of 1.50 l.
VINEYARD at an altitude of 230 metres above sea level. Southern exposure.
Grapes from the young vineyard (spurred cordon training system) with a yield per hectare of 90ql, harvested by hand and placed in small crates. Harvest end of September or beginning of October. Fermentation for a total of 10/15 days in temperature-controlled steel fermenters. Malolactic fermentation and elevation for 6/8 months in large wood or barriques. Maturation in bottle for 6 months.
Ruby red colour with violet hues.
Aromas at the beginning of fresh fruit, morello cherry (wild cherry a little sour), currants, blueberries, followed by scents of spices. Good volume in the mouth with well-presented tannins, slightly silky and spicy, full on the palate with good persistence.
Food pairing: with cold cuts, savoury pie, meat dishes, eggs, poultry meat, rabbit in porchetta, baked fish.

Cured speck is used as an exclusive ingredient to revisit the typical meat ragout, creating a recipe with smoky aromas and strong flavours.

Italian tomato, seasoned Speck 40% (pork, salt, spices), fresh onions, celeriac, Trentino white wine (sulphites), Italian extra virgin olive oil, butter, sea salt, natural flavourings, spices. NO ADDED PRESERVATIVES AND GLUTEN-FREE.
Produced with 100% Tuscan durum wheat semolina, handmade, bronze-drawn, and dried at low temperature. With the intense flavour of wheat with a simple and decisive taste, they bind well with all sauces, even just tomato and basil.
