From a grape spread from Tuscany to Provence, Sardinia and Corsica, a typically Ligurian wine.
Denomination: Riviera Ligure di Ponente Vermentino DOC
Grapes: 100% Vermentino
Area of origin: Our members' vineyards covering the most suitable areas of the Nervia, Verbone and Impero valleys, characterised by predominantly clayey-sandy soils rich in skeleton, with little limestone and a pH between sub-alkaline and acid.
Cultivation systems: Vermentino is grown using the traditional bush system or the counter-espalier system with Guyot pruning. All cultivation operations are carried out by hand due to the conditions imposed by the morphology of the land.
Vinification:The grapes, harvested by hand, are delivered by the members in the hours immediately following the harvest and are pressed extremely softly so as not to spoil the skin. Part of the grapes, before the classic white vinification, is macerated with carbonic snow for a few hours to accentuate the character and typicality. Fermentation takes place at a controlled temperature (16-18°C) in stainless steel tanks and is conducted by selected yeasts. Malolactic fermentation is prevented to preserve the freshness of the product. After a short ageing period in stainless steel, the wine is bottled in the spring following the harvest.
Analytical parameters: Alcohol content: 13,0% vol.
Tasting: A dry white wine of medium straw yellow colour with light greenish reflections. It has an intense perfume, with a clear sensation of citrus fruits, in particular grapefruit. As it matures, it takes on floral notes, also very evident, acquiring sweetness and an almost vanilla-like scent. The flavour is very fresh, with good balance. A dry and elegant wine. Suitable for fish dishes in which the freshness and goodness of the raw material is exalted.
A symbol of Italian cuisine par excellence is the 'sauce without tomato'.
In our own style, we have interpreted the traditional recipe by enriching it with our extra virgin olive oil.

Typical Ligurian pasta, handmade and produced with Italian durum wheat semolina, dried at low temperature. They are ideal with pesto-based sauces, or simple meat and/or vegetable-based sauces.
