The 2021 vintage was characterized by a strong delay in budding, caused by a drop in temperatures in April.
Full sprouting was not seen until late April. Vine vegetative development moved forward from last year by 15 to 20
days. "Providential" rains fell in mid-September, followed by a "little summer" that brought temperatures up to 34- 35 °C
and to temperature ranges around 15 °C. The resulting grapes are very colorful, with crisp berries and significant Babo degrees. The clusters
sparse, i.e., not compact, particularly suitable for drying, were a characteristic feature of the harvest.
As tradition dictates, the Garganega forms the framework on which the wine stands, made up of ripe, crisp fruit, an acidic presence
that gives vigor and unpredictability to the sip. On the other hand, the Chardonnay, which completes the wine with its 20 percent, is responsible for giving the aromas
finer and bring elegance to the palate.
Excellent as an aperitif for caviar canapés and smoked fish carpaccio, it also enhances celery and saffron risottos, simple pinzimoni
of vegetables and olives all'ascolana. It goes well with raw fish and is ideal with tempura, sushi, sashimi and, in general, with the spicy
and sweet-and-sour foods typical of Asian cuisine, eels and with grilled seafood.
Serve at 8-10°C and uncork a few minutes before consumption. 750 ml
