Chardonnay (85%) and Pinot Noir (15%), sourced from the most suitable vineyards in the 19 communes of Franciacorta.
YIELD
9,000 kg of grapes per hectare, with a must yield of 55%, equivalent to 6,600 bottles per hectare.
VINIFICATION
Soft, progressive pressing of the clusters with must fractionation; alcoholic fermentation in steel vats.
MATURATION
Preparation of the cuvée in the spring following the harvest, with the addition of 20% reserve wines wisely divided between Chardonnay and Pinot Noir. Second fermentation in the bottle and subsequent aging in contact with its own yeasts for at least 24 months, followed by another two months after disgorgement.

Extra Brut.

Soft mousse, with good persistence of a tenuous crown; fine, continuous perlage.

Straw yellow with greenish reflections.

Fresh, rich, elegant, discreetly persistent, with notes of white-fleshed fruits and hints of citrus.

The taste reveals remarkable freshness and pleasant acidity; it is soft and balanced, with a pleasant citrus sensation on the finish.
ACCOSTATIONS
This is a wine that is recommended from aperitif to the whole meal and is an excellent accompaniment to some typical Franciacorta dishes, from casoncelli (stuffed ravioli) to lake fish (perch and char). It knows how to enhance, without ever overpowering, the flavors of dishes, whether they are rice and pasta-based rather than white meats or fresh and medium-aged cheeses.

This refined sparkling wine opens with heady aromas of wildflowers and citrus fruits, over notes of bread crust. Vividly flavored, with a lashing freshness that enlivens the aroma of juicy white peach, Golden Delicious apple and lemon candy. The finish closes with soft brioche notes.
