Here ancient terraces on the most beautiful hill of the valley are perfectly
exposed to the late afternoon sun. The pink grapes of Pinot Grigio are
cold macerated with their skins, giving the wine its structure and a hint of
copper in its colour.
Production area: at the feet of the Natural Park of the Lessian Mountains
(Verona), in the Adige Valley.
Soil composition: old terraces along the calcareous cone of the hill
named “Colle Ara”.
Growing system: double guyot. Rigorous winter pruning and intervention
on the vegetation for leaf control apparatus and production. Integrated
pest and soil management respecting the environment.
Harvest: manual, around mid September.

Vinification: soft pressing and cold maceration with the skins for three
or more days. Fermentation and separation of the free run juice from the
skins. Maturation in contact with its own yeasts in stainless steel tanks
and partial malolactic fermentation.
Sensory profile: golden colour with copper hues. On the nose it offers
mineral and fruity notes with scents of pomegranate. In the mouth it is full
and rich with notes of matured yellow fruit. A light and interesting tannic
presence in the final phase.
Food pairings: hearty soups, risotti, first courses with a tomato base,
white meat and fish sauces. Suitable with white meat, fried or baked fish,
shellfish and fried vegetables. It is also a pleasant aperitif.
Service temperature: 12 - 14 °C.
