Vinification: de-stemmed and crushed grapes are placed in maceration tanks for alcoholic fermentation at 24-27°. During this phase, pumping over, punching down and délestage are alternated. After racking, the wine is placed in temperature-controlled tanks (17-19°) where malolactic fermentation takes place.
