Vinification and ageing: This wine is the result of a careful selection of Sangiovese from a single vineyard located slightly lower, around 440 m, where the soil has a greater clay component. Vinified naturally through spontaneous fermentation in cement vats
cement vats, after racking it continues its ageing in traditional medium-capacity oak casks (25 hl) where it remains for about 24 months. It continues its cement refinement for another year and is completed in
bottle where it remains for the last 12 months.
This wine is dedicated to Luigi, who made our life project possible. A 'classic' Sangiovese that is a true expression of the denomination.
