Wine Making
Vinification:
Vinification takes place in the cellar of Nozzole Estate. The juice ferments in stainless steel tanks at a controlled temperature of 26°/28°C (72° / 82° F) with maceration lasting approximately 15 days.
Ageing:
Ageing process: 16/18 months in French oak barrels (225 litri – 59 gal) part new and part one or more years old. Bottle ageing: minimum 6 months
The Wine
Tasting notes:
Il Pareto is the pure expression of what Cabernet Sauvignon can demonstrate in Greve in Chianti. Very small production and only in exceptional vintages it is our Cru’. Aromas and Flavors are perfectly balanced by a small French oak that integrates perfumes of a great complexity. Mature tannins and outstanding long finish are the characteristics of a great aging potential of this wine.
