PETER ZEMMER Grape variety: Chardonnay - Alto Adige DOC Origin: Grown on low vine shoots on guyot training systems in the best vineyards on the plain around the village of Cortina s.s.d.v.. The favourable location, ideal irradiation and good ventilation of the bunches favour the ripening of grapes of excellent quality.
Yield: 65 hl per hectare
Vinification: the grapes are macerated for a few hours before pressing to accentuate the fruity aroma of the wine. They are then carefully pressed and the deposits are left to decant naturally. Alcoholic fermentation takes place in steel tanks with pure yeasts at a controlled temperature of 19° C.
Characteristic properties: Wine offering a broad carousel of fruity aromas, intense, pleasant and pleasantly persistent. Colour: greenish yellow Bouquet: delicate, typically fruity, with a hint of banana and melon Taste: dry, fresh, lively, pleasantly full
