Production Area: San Quirino (PN) - Friuli Venezia Giulia
Soil: flat area consisting of the alluvial cone of the Cellina torrent. It is a thick mattress of alluvial sediments of calcareous-dolomitic nature of fluvioglacial origin located at the foot of the Dolomites.
Vinification: soft pressing of the grapes (0.20 Atm) with vacuum presses. The must thus obtained is cleaned by dynamic decantation. Following the innocuous use of selected yeasts, fermentation starts at controlled temperature (12-14°C) with continuous management of fermentation dynamics. The fermentation temperature is deliberately kept very low, to enhance the fresh and fruity notes of this wine. At the end of fermentation, the wine is clarified avoiding long contacts on a fine deposit, in order to enhance the pleasantness of drinking more immediately.
