Citadelle is unique because of its slow distillation method with an open flame that heats the small pot stills. It is not distilled year-round but only between March and November with a small Charentais still, of those in use since the 1700s. In fact, this gin is one of the few to use an open-flame system, which fell into disuse after the invention of less dangerous methods. Producing this gin is time-consuming; in fact, the 19 botanicals are steeped for 79 hours before distillation, and the flame system requires a full day's work. Key ingredients include French juniper, violets, coriander from Morocco, almonds and bittersweet lemon peel from Spain, Mexican orange peel, angelica from northern Germany, cardamom from India, cassia bark from Indochina, cinnamon from Sri Lanka, Chinese licorice, the spicy flavor of grains of paradise from West Africa, cubebe pepper from Java, Dutch cumin, French anise, nutmeg and fennel. Finally, Italian iris root.
