MEZCAL ILEGAL REPOSADO

Ilegal is a perfect balance of espandin vivipara agave flavor and a light smokiness. The piñas are cooked in a traditional buried oven and placed on top of volcanic rocks. The heart of the agaves is then ground using the tahona grinder. After fermentation, triggered only by indigenous yeasts, the must is distilled twice in Oaxaca's Tlacolula Valley by a fourth-generation Mezcalero. The result is a mezcal extremely faithful to tradition. Elegant and delicate mezcal aged for 4 months in American oak barrels.
