Moscoso Distillers, also known as Barik, a Creole term meaning "cask," has been producing rum from pure sugarcane juice in Haiti for three generations. The distillery's founder, Jules Moscoso, arrived in Leogane from the Dominican Republic in the early 1900s. Although official documents date the distillery's birth to 1925, Jules' wife's ancestors had already been making and selling Kléren for three generations. The original apparatus by which Kléren were distilled consisted of a combination of discontinuous stills and Creole columns of five or six dishes, made of copper and operated by direct fire or hot water. Abandoned and closed for a few years, the distillery was finally opened by Michael Moscoso, the current owner. First Aged Kléren. It is made from Madame Meuze sugar cane juice from the soil of the Léogâne region. Fermentation begins with bread yeast and is distilled in a Creole column. Aged for three months in small wooden barrels.
