Canerock Spiced Rum comes from Clarendon Distillery and Long Pond Distillery in Jamaica. The base is Jamaican rums, which have been flavored by an infusion of vanilla pods, coconut meat, ginger and other delicate spices. Distillation was carried out in the column and pot still process. The rums used are aged up to 3 years, a small percentage even 5 to 10 years in American oak barrels. Ten to 15 percent of Canerock Spiced Rum received a finish in Sherry PX casks.
