Plantation Rums experience double aging, the first in the Caribbean and the second in the Cognac region of France. In the Caribbean, where the angels' share is high because of the tropical climate, a significant 7 percent, the rum ages in Bourbon (American oak) barrels, which give definite notes of vanilla and coconut. After a few years in the Caribbean, Plantation rum is taken to the Château de Bonbonnet, France, where it ages in small Cognac Pierre Ferrand (French oak) barrels that bring delicate tannic hints. This latter aging gives the elegance and finish that characterizes all Plantation rums. Plantation Gran Anejo is a blend of rums from Guatemala and Belize. The rums before blending mature for three years separately in the two countries of origin, then are further aged a final year in small oak barrels in France.
