SAUVIGNON SANCT VALENTIN
It was in 1989 that our cellar's most famous white wine was born. For more than 30 years, the Sauvignon Sanct Valentin has benefited from individual, selected plots on the slopes at the foot of the Mendel mountain to generate a wine of the highest profile. With seductive fruit, excellent minerality and persistence, this wine is the most important of the Sanct Valentin line and one of the most awarded white wines in Italy.
Sauvignon Blanc Stella FliederHof
The French style characterises this white wine, which is characterised by its minerality, sharpness and precision.
The grapes come from a steep vineyard in the municipality of Kaltern that has belonged to our family since the 2020 harvest.
The soil in this wine-growing area, which has a gradient of up to 35%, was shaped by glaciers during the last Ice Age.
It contains a particularly high percentage of limestone, which gives the wine its special character. The vines are 30 years old
and their roots go deep into the very permeable soil.
The grapes are harvested in mid-September. Before pressing, they are left for a short period in contact
with the skins for the specific purpose of extracting aromatic components.
Clarification of the must takes place overnight by natural sedimentation, after which the must ferments spontaneously in wooden barrels.
A long period of ageing on the lees allows the wine to mature and find its harmony.
The name 'Stella' reflects the character of this wine: decisive, sincere, precise and luminous are attributes that suit it very well.
Sauvignon Karolina Nicolussi-Leck
The vines of Sauvignon 1917Karolina grow at 350-400 metres above sea level, right at the foot of the ruins of
Castelchiaro, on soils consisting of gravel, clay and porphyritic rock that give the grapes a unique and unmistakable character.

Manual harvesting is followed by a short maceration and gentle crushing of the whole grapes.
After the subsequent natural sedimentation and separation of the sediment, fermentation and
maturation on the lees takes place at a controlled temperature in large wooden barrels (25%), steel
d´inox (65%) and Tonneau (10%).
This Sauvignon is a complex wine that releases intense aromas of citrus, elderflower and exotic fruits.
It is mineral on the palate, persistent with fresh, lively acidity and a refined aftertaste.
