Production area: northern slope of Etna, Contrada Santo Spirito, Passopisciaro
Soil: sandy loam with abundant presence of skeleton
Harvest: by hand in the second ten days of October
Vinification: maceration in contact with the skins for 18 days; soft pressing
Ageing: 14 months in fine-grained, lightly toasted French oak tonneaux. Natural malolactic fermentation
Colour: dense ruby red with garnet hues
Nose: intense, complex and articulated, aromas of myrtle, red fruits, wet earth and herbs
Taste: full-bodied, energetic and structured, vibrant freshness and minerality, with very fine tannins
Format: 0.75 l bottle - 1.5 l magnum
Alcoholic Grade: 15% vol
