Soil: low-slope conoids with regular morphology and sandy-gravel deposits
Harvest: manual
Vinification: shortly after soft pressing of the grapes, the must is divided into parts in steel where it undergoes a short fermentation with cold maceration, and in terracotta amphorae where it remains in contact with the skins for the following 7 months
Ageing: the different parts are blended and then further refined in steel until bottling, more than 10 months after the harvest. This is followed by a few months of bottle ageing to achieve a perfect organoleptic balance.
Colour: intense straw yellow with golden hues
Nose: delicate, harmonious, mineral bouquet. The fruitiness recalls cedar, apple, kiwi with a hint of white flowers, hawthorn and flint. A light spicy note accompanies and completes the picture
Taste: Precise mouthfeel with a fresh, savoury and pleasantly balanced palate, surrounded by fruity and floral scents with mineral hints. A long, persistent finish that leaves great freshness and balance
