Luminous straw yellow colour; regular and persistent perlage. The nose is aromatic and mineral, characterised by hints of white-fleshed fruit and hints of baker's yeast. The taste is fresh and vibrant, pleasant and long. The finish is slightly savoury.
Excellent if paired with fish or shellfish dishes, it can accompany grilled lobster.
From the heart of the Marne comes the Champagne Extra Brut Blanc de Noirs "Harmonie", produced by Franck Pascal. It is made from grapes grown according to the biodynamic method, and composed of a cuvée 50% pinot noir and 50% pinot meunier. It rests for 48 months on the lees. Lively and at times irrepressible, aromatic and mineral, this is a really fine Champagne. If you choose to keep it for a few years in the cellar, it will offer hints of honey and memories of candied fruit.
"A certified biodynamic winery since 2004 - even though the rows of vines have been free of chemical herbicides and synthetic products since 1994 - Franck Pascal's is a winery whose main objective is the pursuit of an energetic balance between the elements of nature, without ever implementing invasive artificial corrections.
Just under four hectares of vines in total, 70% of which are planted with pinot meunier, 27% with pinot noir and the remaining 3% with chardonnay. Small parcels of land, spread across no less than seven communes in the department of the Marne, are under the control of the Baslieux-sous-Châtillon winery, where the use of wood is kept to a minimum during vinification in order to enhance the terroir and varietal. Remaining in contact with the fine lees, often right up to bottling, Franck Pascal's Champagnes are left to ferment using only indigenous yeasts, with very little use of sulphur dioxide, and are neither racked nor filtered. Champagnes that are more natural than this are hard to find; labels that offer a rare intensity of taste and smell, not easy to find in the productions of small winemakers. Bubbles that appear shy and austere, only to open up in the glass after a couple of minutes, offering a mineral length and complex texture, while remaining exceptionally elegant and refined.
