seeds,separatingthem from thegrapeskins.Thistakesaway
somewherebetween20to45%ofthemass.
Inthiswayweareabletoavoiddistillingthe‘wood’(stems)and
oilwhichareintheseeds.Wedistillonlytheskinsassoonas
thesugarfermentationhasfinishedwhichhappensinsmall
tankof880pounds.Thesmallbatchfermentationallowsusto
avoid overheating the mass during its fermentation and
retainsmorecharacteroftheMüllerThurgaufruit.
