Harvest: by hand in 17 kg crates with meticulous selection of the best bunches
Vinification: the grapes were harvested early in the morning in order to have a lower temperature of the berries during pressing. Soft pressing of the whole grapes and elimination of the most colourful fractions of must, obtaining the must flower and spontaneous clarification. Alcoholic fermentation between 13 and 15 °C, spontaneous decanting and cold stabilisation during the winter
Ageing: drawing in the spring following the harvest. Foaming at 16 °C and maturation on the lees for 24 months with subsequent disgorgement
Colour: Straw yellow colour with golden reflections. Visible and persistent perlage
Nose: fragrant and vibrant, with notes of balsamic white flowers and mineral hints
Taste: very harmonious and pleasant, with a good acid vein that helps cleanse the palate, leaving an aftertaste characterised by mineral notes
Acidity: 7.1 g/l
Bitterness: 4.5 g/l
