Vinification: grape selection first in the vineyard and then on a vibrating table in the cellar, destemming, soft roller crushing, very short cold maceration with dry ice and subsequent fermentation with low sulphur dioxide content at controlled temperature. Aging on fine lees until the draught and resting on yeasts for 48 months.
Ageing: disgorgement March 2016
Bottling: isobaric
Colour: straw yellow, with a wealth of fine and persistent bubbles
Bouquet: great balance between fragrant notes of good yeast and freshly baked bread, and hints of both fresh and ripe fruit.
Taste: freshness and minerality, in solid body; then gradually reveals a delicate softness that makes up a balanced, long fresh and citrusy finish.
Acidity: 6.8 g/l
Amability: 5 g/l
