Harvest: after a light thinning out carried out at the end of July, manual harvesting in 17 kg crates with meticulous selection of the best grapes
Vinification: destemming, followed by spontaneous fermentation in a truncated conical oak vat with a total maceration period of 28 days. During this period, delestage and pumping over or punching down was carried out according to fermentation kinetics. Malolactic fermentation in 650 l oak barrels
Maturation: aged for 10 months in the same 650 l oak barrels. Before bottling 6 months of ageing in steel tanks and after bottling, at least 6 months of further ageing before marketing
Colour: brilliant ruby red
Bouquet: elegant, with notes of dog rose, small red and black fruits, black pepper and a balsamic vein
Taste: fruity, fresh, harmonious, with a very pleasant drinkability and remarkable persistence
Acidity: 6.1 g/l
