Vinification: soft destemming followed by spontaneous fermentation with indigenous yeasts in stainless steel tanks at controlled temperature below 26 °C. Maceration for 16 days. During maceration, pumping over or punching down is carried out according to fermentation kinetics. Spontaneous malolactic fermentation in small barrels used during the autumn following the harvest.
Maturation: 12 months in 25 hl barrels. Before bottling, 6 months of ageing in stainless steel tanks. After bottling, at least 12 months of further ageing before marketing.
Colour: brilliant ruby red colour with garnet reflections
Nose: intense, with notes of spices, ripe berries and a typical fresh balsamic note (dwarf pine, sage and rockrose). Aromatic finish with a distinct hint of bitter orange
Taste: fruity, harmonious, fragrant and very typical. Elegant and balsamic, with an acidity that gives it great ageing potential.
