Grape varieties: Chardonnay, Pinot Grigio, Sauvignon, Gewürztraminer
Origin: A wine with a strong character that comes from selected areas in which low-trunk vines are cultivated partly on guyot training systems. The grapes for this particular cuvée grow, in the best vine-growing terrain and under ideal conditions, in the plain around the village of Cortina s.s.d.v.. A low yield per hectare, favourable location, ideal radiation and good ventilation of the bunches favour the ripening of grapes of excellent quality.
Yield: 60 hl per hectare
Vinification: the bunches are poured into the pneumatic press already crushed and destemmed. The grapes are cold macerated for about 8 hours before pressing in order to enhance the fruitiness of the wine. The grapes are then carefully pressed while the deposits are left to decant naturally. Two-thirds of the alcoholic fermentation takes place in steel vats with selected yeasts at a controlled temperature of 19° C while the remaining third takes place in small French oak barrels that give this cuvée roundness and pleasantness thanks to six months of ageing. After bottling, before the wine is put on the market, a further maturing of a few months is necessary to guarantee a product of exceptional quality. A unique cuvée presented in ultra-modern bottles.
Organoleptic characteristics: its chromatic intensity is accompanied by a rich bouquet that gives the impression of a wine of extraordinary harmony. Tasting this wine, thanks precisely to its ageing, offers intense emotions.
Colour: greenish yellow to brilliant straw yellow Bouquet: intense bouquet of ripe fruit with a variety of fragrances (apricot, tropical fruits and vanilla) Taste: well structured, balanced and savoury, with a distinctive acidity, great intensity and pleasantly rounded
Recommended pairings: Appetisers, fish, vegetable and white meat main courses
Serving temperature: 12 - 14° C
