Soil: alluvial, very deep, sandy-clayey, with clayey lenses, rich in pebbles
Harvest: manual
Vinification: the selected grapes, separated by homogeneous micro-particles, were destemmed and crushed very softly, within minutes of harvesting, without adding sulphur dioxide, to preserve yeast biodiversity. Fermentation and maceration were favoured with frequent manual pumping over. Maceration lasted 13-14 days
Maturation: 12 months in oak casks, 225 l, not new, on the fine lees (on the lees). Each barrel was manually stirred once a week. The wine was then left to stand still and gradually racked several times to clarify it (without filtration). At the end, it was reconstituted in a large tank and left to stir naturally for about 3 months. Finally, it was refined in the bottle for at least 12 months, in the best conservation conditions. The addition of sulphites is minimal
Colour: ruby red with purple reflections
Nose: small fruits such as blueberry and currant, with a pleasant hint of tobacco and spices
Taste: intense and soft, has a good structure and long finish
Format: 0.75 l bottle - 1.5 l magnum
Alcoholic Grade: 13.5% vol
