Vinification: soft pressing of the grapes, cold decantation and fermentation with selected yeasts at controlled temperature, ageing on fine lees in stainless steel tanks until frothy.
Refinement: on fine lees in stainless steel tanks until the froth has set.
Foam intake: refermentation in autoclave at controlled temperature, addition of selected yeasts for a slow refermentation of about 30 days until reaching 5 atm, cold stabilization, microfiltration.
Bottling: isobaric
Colour: straw yellow with greenish reflections and a fine and consistent perlage.
Scent: fruity apple and pear with hints of citrus fruits that fade into floral
Taste: creamy and soft in the mouth with fresh notes
Acidity: 7 g/l
